Pecan Coconut Cookies
½ cup raisins
1 ¼ cup pecans or walnuts
1 cup unsweetened coconut
1 tsp vanilla
1 tbls soft butter
2 tbls honey
Preheat oven to 300F.
Place all ingredients in a food processor. Blend until fairly smooth, but still with a little texture. Form dough into balls, place on a buttered cookie sheet and gently flatten. The cookies stay together better if you make smaller balls, no less than 1” in diameter after flattening.
Bake at 300F for 10 minutes.
