Oatmeal Molasses Cookies
1¼ cup sweet rice flour (also called glutinous rice)
¼ cup arrowroot
1 tsp baking soda
¼ tsp salt
½ tsp powdered ginger
¼ tsp cloves
¾ cup butter, softened
¼ cup molasses
¼ cup honey
¼ cup maple syrup
¼ tsp xanthan + 1 tbls water mixed together
¾ cup rolled quick oats or quinoa flakes
Measure all ingredients except rolled oats in order given into mixing bowl. Beat well. Stir in rolled oats. Drop by spoonfuls onto greased baking sheet. Bake at 375F 5-8 minutes (this depends on the size of your cookies).
