Coconut Oatmeal Cookies
Wheat free, Gluten free if use Gluten free Oats, Egg free, Cane sugar Free, Soy free, Dairy free
These are a mildly sweet cookie that tastes almost like a sweet biscuit. They are called cookies, but they are healthier than most store bought muffins. Great for kids!
*1 tsp. baking powder
**2 tbls ground flax seed
1 cup coconut oil (solid a room temperature)
1/2 cup maple syrup
1/2 cup honey
***2 ½ to 3 cups oat flour
1/4 tsp xanthum gum
1/2 tsp. salt
2 tsp vanilla
3 tsp cinnamon
1 tsp pumpkin pie spice
3 cups old-fashioned rolled oats
3/4 cup raisins (optional)
3/4 cup roasted walnuts (optional)
Preheat oven to 375F.
* Mix together 3 tbls water and 2 tsp. baking powder until fizzy, then add 3 tbls melted oil.
**Mix together 2 tbls ground flax seed and 5 tbls hot water and allow to sit until gelatinous. It might take just a couple minutes.
Beat coconut oil, maple syrup, honey, and vanilla in large bowl with mixer until creamy. Add baking powder mixture and flax mixture, beat on high for several minutes (this makes the cookie fluffier). Stir together the rest of the dry ingredients except the rolled oats and gradually add to wet mixture, beating until well blended. Add oats and blend well. Add enough extra oat flour until you get the “right cookie consistency.” The stickier the batter, the flatter and crunchier the cookie.
Drop by teaspoons on ungreased cookie sheet and bake for 8-10 minutes. Cool and enjoy!
*** To make oat flour put oats in a vita mix or a food processor and blend until flour texture.
