Oatmeal Raisin Cookies

Cane Sugar free, Gluten free (if use gluten free oats, soy free, corn free, high fiber

These cookies are mildly sweet and are healthy enough to eat as a morning biscuit, or they can be eaten as a dessert. It’s a great high fiber treat for kids and adults that is naturally sweetened. I hope you enjoy them. My kids sure do!

Ingredients:
2 eggs
¾ cup honey
¼ cup butter
½ cup apple sauce
2 Tablespoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon nutmeg
1 teaspoon baking soda
2 cups oat flour *
¼ cup ground flaxseed
1 cup quick oats
2 cups raisins

Directions:
1. Preheat oven to 350oF. Lightly butter a cookie sheet.
2. In a stand mixer combine ingredients in order of appearance.
3. Spoon mixture onto cookie sheet and cook for 10 minutes. Remove from the cookie sheet to cooling rack. Cool at least 3 minutes before serving.
* I made my own oat flour in my Vita-mix using steal cut oats. Fresh ground flour always makes cookies taste better. They’re good if you buy the flower too. You can buy oat flour at Fred Meyers in the nutrition center. You can make these gluten free by using gluten free oats.
