Mixed Greens Herb Salad with Balsamic Vinaigrette
Place 2 large cups of greens on your plate. Add chopped red peppers, chopped jicama, fresh mung bean sprouts, sliced cucumbers and chopped scallions. Mix in approximately 1 tbls each of fresh chopped herbs. Cilantro, dill, and basil are my favorites. Add a few slices of avocado on top. Top with Balsamic Vinaigrette and mix.
Balsamic Vinaigrette
1/4 cup Balsamic vinegar
3/4 cup olive oil
1/2 tsp Celtic sea salt
1/2 tsp pepper
1 tsp maple syrup
1 tbls minced garlic to taste
Put all ingredients in a salad dressing jar with a lid and shake well. Store in the fridge.
