Edna's Vegetable Medley Soup
This is a great way of consuming your veggies and is a perfect fit for the purification program. When you cook vegetables with water many of the nutrients are extracted into the liquid, so soup is a great way to drink your vitamins in the broth. The soup will taste the best and be the most nutritious with homemade broth, but if that is not available use store bought broth that does not contains MSG, autolyzed yeast extract or tortilla yeast.
1 chopped onion
2 cloves garlic, minced
6 carrots, peeled and sliced
1 green pepper cut into bit size pieces
1 red pepper cut into bit size pieces
5 stalks celery
1/4 of a head of white cabbage, chopped
2 leaves of de-stemmed kale, chopped or spinach chopped
1 medium zucchini halved and sliced
2 cups or 2 handfuls of broccoli, cut into bit size pieces
1-2 jalapeño's chopped (optional)
8 oz container or organic salsa
2 bay leaves
3 tbls dried parsley
sea salt and pepper to taste
Cover all the above with chicken broth so it is 1 inch above the veggies. Bring to a boil, turn down and simmer until the vegetables are done.
