Healthy Taco Seasoning Mix
Most Taco Seasoning Mix that you buy in the store has corn starch and MSG in a variety of hidden forms. I made this for my children and we all agreed it surpassed any store bought brand and it is free of chemical alteration and brain cell killing MSG (often hidden as yeast extract).
Servings: Makes 2-1/4 cups. There is a lot of pulling spices from the cabinet so making extra and putting in jars is well worth it.
Ingredients
1/2 cup chili powder
1/2 cup tapioca starch
1/4 cup celtic sea salt (reduce to 1/8 cup for low-sodium version)
2 tablespoon ground black pepper
3 tablespoons paprika
1 tablespoon smoked paprika (I didn't have this so I just used paprika)
1 tablespoon onion powder
2 tablespoons garlic powder
2 tablespoons dried leaf oregano (I used Italian seasoning mix)
2 tablespoons ground cumin
1-2 teaspoons cayenne pepper (optional, I have children so I didn't use this)
2 teaspoons ground coriander
1 tablespoon unsweetened cocoa powder
Whisk together in bowl. If the onion or garlic powder is clumped use your fingers to break it apart. Store in airtight container. (Adjust or omit cayenne for more or less heat.)
SHREDDED CHICKEN: Place chicken in a pan and cover with water. Bring to boil and cook until chicken is no longer pink, approximately 10-15 minutes. Let cook and pull apart in strings with a fork and your fingers depending on how small you want the shreds. Season according to below. I used 1 section of a Natural Grocers 3 pack chicken for 1 adult and 2 kids.
FOR TACO MEAT: Use 1/4 cup seasoning mix for each pound of grass fed ground beef or organic poultry. 1 pound of ground meat is enough for approx. 12 tacos.
TO SEASON GROUND BEEF FOR TACOS: In large skillet, cook 1 pound grass fed beef over medium high heat until no longer pink. Typically grass fed meat has less fat so you shouldn't have to drain any fat off, but if there is some in the pan drain off any fat. Add 1/4 cup seasoning mix and toss to coat the meat. Add 3/4 cup water, stir to combine. Bring to boil, lower heat and simmer uncovered until mixture thickens, approx. 5-10 min. Cover and keep warm on low until ready to serve.
TO SEASON GROUND TURKEY OR CHICKEN: Follow same directions as for ground beef, except heat 2 teaspoons olive oil in skillet before adding meat.
TO SEASON WHOLE CHICKEN BREASTS/THIGHS OR BEEF STEAKS FOR TACOS: Coat meat on all sides with seasoning mix. Grill, broil, or pan fry meat. Let meat rest for 15 minutes before thinly slicing or shredding, to retain moisture in the meat.
