Grain Free Sweet Potato Waffles
Gluten free, Grain free (tapioca), Soy free, Corn free, Dairy free, Paleo friendly, not Gaps friendly.
This makes a big recipe, but they freeze well. They are great for Eggo waffles during the week. To keep your sugars low serve topped with grass fed butter or coconut whip cream with sliced strawberries.
2 cups pureed cooked sweet potatoes / pumpkin / squash
6 eggs
2 cups dairy free milk
1/2 cup melted butter
2 tbls maple syrup or honey
3/4 tsp baking soda
3/4 tsp sea salt
1 1/2 tsp cinnamon
1 1/2 cups almond flour
6 tbls coconut flour
3 cups tapioca or arrowroot flour (the original recipe says that chestnut flour has been subbed for part of the tapioca with good results)
Blend the ingredients until smooth. I mixed it in a large mixing bowl with my standing blender. You could also use a hand blender. Cook in well oiled (I used coconut oil) waffle iron. If you are going to freeze them, cool them first on a wire rack - they get soggy if just cooled on a plate.
