Easy Over Eggs and Vegetables

The greatest challenge people have when they attempt to lower their carbohydrates is breakfast. Here is a yummy unique way of eating more veggies and while consuming enough protein to keep your cravings low and your blood sugar regulated.

2 eggs, ideally "pasture fed"
1 chopped green onions
1 spring of fresh dill or cilantro chopped
2 stalks of broccolini (called brocolette at Costco) or broccoli, asparagus,
kale, or other chopped leafy green
tiny pinch salt
coconut oil for sautéing
sliced sweet yellow tomatoes (optional)
sliced avocado (optional)

Melt coconut oil and sauté all veggies over medium heat. Crack the 2 eggs on top and cook over heat until the whites have cooked some. Cover with a lid, remove from heat and let the steam cook the surface of the eggs. Alternatively you could flip the eggs, which will likely keep the yolk less solid. Top with slices of yellow or sweet cherry tomatoes and slices of avocado.
