Ginger Cookies
1 ½ cup rice flour
½ cup arrowroot or tapioca starch
1 tsp. baking soda
1 tsp cinnamon
1 tsp clove
1 tsp ginger
1 egg or mix ½ tsp xanthan with 1 tbls water and allow to sit for a few minutes prior to adding to recipe
¼ cup molasses
¾ cup butter
½ cup maple syrup or brown rice syrup
Mix or sift dry ingredients together.
In separate bowl cream butter, then add the arrowroot or tapioca starch, egg and molasses and blend until creamy. Stir in dry ingredients and mix thoroughly.
Put on ungreased cookie sheet spread so they are not to close together.
Bake at 325 degrees for 9-15 minutes or until golden brown.
