Cocoa Coconut Cookies
½ cup butter
½ cup honey
1 egg or 1 egg white + 1 tbls olive oil or ½ tsp xanthan mixed with 2 tbls water and allow to sit
5 minutes or longer until congeals
1 tsp vanilla
¾ cup rice flour
¾ cup millet flour
¼ cup cocoa
1 cup coconut
1 tsp baking soda
½ cup chopped pecans or other nuts
Preheat oven to 350F.
Blend butter and honey; add egg and vanilla and blend. In a separate bowl combine remaining ingredients. Add wet ingredients to dry and mix well. Drop by rounded spoonful onto a cookie sheet and allow room for them to spread as they cook. These cookies work best if you make small cookies. Bake for 10 to 12 minutes. Allow to cool for 5 to 10 minutes prior to removing them from the cookie sheet.
