Bone Broth, Chicken

2 whole organic chicken carcasses, necks, and gizzards
2 carrots peels and chopped
2 yellow onions diced
4 stalks celery chopped
6 cloves garlic halved
2 tbls raw apple cider vinegar
2 tbls sea salt
2 cups parsley chopped
12 cups water

Place the bones of 2 whole organic chicken in a slow cooker. Add the remainder of the ingredient and cook on low for 18-24 hours. If you are on a low fodmap diet omit the onions and garlic and replace with an equivalent amount of the green portion of green onions.
After 18-24 hours, strain the broth through a mesh sack or scoop out solid parts with a draining scoop. Allow broth to cool. You can heat to serve and drink as is or turn into soup or freeze until ready to use.
