Banana Muffins or Loaf

This is a recipe adapted from Wellness Mamma Coconut Flour Banana Muffins. My daughter made these in order to use up some old bananas. They were a big hit. They are sweetened by only banana, so to make these more kid friendly instead of thinning with a little milk we added a couple tablespoons of melted honey.

Ingredients:

  • 5 eggs

  • 2 ripe bananas

  • ¼ cup coconut oil (or butter, softened)

  • ½ cup coconut flour

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 1-2 TBSP melted honey (in replacement of milk)

Directions:

Preheat the oven to 400°F.

  • Grease a muffin tin or bread pan.

  • In a medium sized bowl, mash the banana with a fork.

  • Add all the remaining ingredients except for the honey and mix until smooth.

  • The batter should be thick, but if it is too thick, add a little melted honey to thin.

  • Spoon ¼ cup into each cavity of the prepared muffin tin.

  • Bake for 13-18 minutes until lightly browned and set in middle. If baking a loaf instead of muffins you will need to cook for longer.
