Poppy Seed Dressing
This is a sweeter dressing that pairs well with smoked salmon, other fish or left over chicken.
Ingredients:
ź cup white vinegar or raw apple cider vinegar (replace with lemon juice for variety or rice vinegar for a milder vinegar flavor)
2 tbsp. Honey
1/2 cup Olive oil
1 1/2 tsp finely chopped white onion or shallot or green onion for SIBO friendly option (optional)
2 tsp Vegenaise, soy free (this is a healthier mayonnaise option found in refrigerator section of Chucks or Natural Grocers)
1/2 tsp mustard powder or dry mustard
1-1 1/2 tbsp. Poppy seeds
1/2 tsp sea salt
Whisk the vinegar and honey together until dissolved. If the honey is hardened then melt prior to mixing. Add all other ingredients except for the olive oil and whisk together. Once all blended slowly pour in the olive oil as you whisk until well combined. Slowly pouring in the olive oil will thicken the dressing and make it feel more creamy. Alternatively you can put all ingredients in a salad dressing container or blender bottle and shake vigorously for one minute. This will make the dressing thinner.
