Instant Pot Chicken Soup
This recipe can be adapted for many types of diets. If you are paleo or or on a nightshade free autoimmune diet then skip the potatoes. If you are on a low fodmap SIBO diet you could estimate how many green onions would replace the white onions and omit the chopped garlic. If you are whole 30 you can eat it as is. If you are keto omit the white potato.
This is a recipe that makes a meat broth. The bones do not touch the liquid. After you peel the meat off the bones put them back into the instant pot to make bone broth. Recipe to Make Bone Broth
1 whole organic chicken 3-4 lbs
1 onion large, diced
2-3 stalks celery diced
3 carrots medium, diced
1 peeled potato, chopped (optional)
2 cloves garlic, chopped fine
3 bay leaves
sea salt & ground black pepper
About 5 cups filtered water
Rinse the chicken and remove the giblets. (I save these, chop them up and hide them in other dishes in order to get the nutrients out of them. Organ meats are the most nutritionally dense foods that exist, especially liver).
Place the chicken in a 6-quart Instant Pot stainless steel container. Then add the onion, celery, carrots, bay leaves, sea salt and pepper.
Add about 5-6 cups of water to the point where it covers the chicken a little over 1/2 the way. Add the container to the Instant Pot and secure the lid, making sure the release valve is closed. Set to 30 minutes on Manual (high).
After the cooking is complete, allow the pressure to release naturally. Or if you're in a rush, quick release the steam. Remove the lid.
Using a slotted spoon, remove the chicken. It will fall apart. Lay the chicken on a baking sheet and spread it out until it is cool enough to handle.
Once the chicken is cool enough to handle, pick the meat off the bones and shred it with your fingers. Add the meat back to the Instant Pot, discard the bay leaves, adjust the seasonings with salt and pepper, and serve.
