Creamy Cilantro Lime Dressing

I was making my children spaghetti and trying to figure out how I could join in considering I'm not eating grains or tomatoes. I was in a bit of a quandary when I discovered this wonderful sauce. I ended up using my spiral slicer to make zucchini noodles. It is awesome and cost me a total of $11 on Amazon. I cooked seasoned grass fed hamburger, sautéed zucchini noodles and mixed it all with this sauce and I didn't miss the noodles one bit.

½ large or 1 small avocado
1 lime, juiced (or if in a pinch you can use lemon)
½ cup packed cilantro
½ tbsp olive oil
1 ½ tsp garlic paste (or 1 clove)
1/4 to ½ cup water depending on thickness desired
¼ tsp sea salt
Freshly ground pepper

Place all ingredients in a food processor until completely mixed and is smooth and pourable. You could also place in a mason jar and mix with a hand blender. The original recipe called for 1/2 cup water, but I increased the amount of avocado and reduced the water to make it more of a sauce thickness. The recipe is quite versatile.
