Cabbage slaw

This is a great summer recipe that is filled with nutrients to help keep you healthy all year round. Cabbage is part of the Brassica family and is rich in vitamin C, Sulfur, Vitamin E, Magnesium, Potassium, Calcium and fiber making it an excellent immune stimulating, infection fighting food that also boosts detoxification. Cabbage is also rich in Iodine which helps with proper functioning of the brain, nervous system and endocrine system.

1/2 cup grape seed oil
1/2 cup red wine vinegar
2-3 tbls melted honey
2 tsp sea salt
¼ tsp pepper
1 head shredded purple cabbage
¾ tsp onion powder (optional)

Shred cabbage very fine using a knife or a mandolin. Mix wet ingredients and stir into shredded cabbage. Mix thoroughly.
I often sprinkle with a little bit of stevia to add sweetness.
