Cajun Style Chicken Rub

This is a great substitute for a shake and bake or for other pre-made seasonings that often contain hidden sources of monosodium glutamate (MSG). MSG is a neuro-toxin. The glutamate portion of the MSG excites nerve fibers so they continually fire until they die. It also causes a increase in appetite and we tend to want to eat an hour after finishing a meal. MSG is often hidden under other names such as natural flavorings, yeast extract, anything hydrolyzed, and textured protein to just name a few. It can even at times be hidden in the word, other spices. Attempting to find pre-made seasoning mix without the possibility of MSG is daunting and unnecessary when you can mix up some seasonings at home and have all the flavor without killing your nerve cells unnecessarily.

4 tbls onion powder
2 tsp paprika
2 tsp garlic powder
2 tsp sea salt
1 1/2 tsp black pepper
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp dried sage

Combine all of the ingredients well. The smaller the size of the herbs the more it will combine fully and spread the flavors. If you have dried your own herbs and they are a larger size make sure you break them up with a mortar and pestle or a spoon in a bowl or just rub them vigorously between your hands. Season you chicken on all sides. Let is sit in the fridge for an hour before smoking or bar-be-cuing to give the flavor time to absorb. If you don't have time you can cook it immediately in a pinch. For a more flavorful breast meat, remove the skin and put the rub directly on the meat.

I made extra and put it in my spice cupboard for future use.
