Black Bean Quinoa Salad
Gluten Free, Dairy Free, Grain Free, Soy Free, Corn Free
Ingredients:
• 2 cups cooked quinoa, cooled
• 2 teaspoon olive oil
• juice of a large fresh lime (about 3 tbls)
• 1/2 teaspoon cumin
• 1/2 teaspoon coriander
• 2 tablespoon fresh minced cilantro
• 2 tablespoons minced scallions
• 1 (15 ounce) can black beans, rinsed and drained
• 2 cups diced tomatoes
• 1 cup diced bell pepper
• 2 teaspoons minced jalapeno chiles (optional)
• salt and pepper
Directions:
In a small bowl, combine the oil, lime juice, cumin, coriander, cilantro and scallions. In a separate large bowl combine beans, tomatoes, bell peppers, Jalapeño, and quinoa. Season lightly with salt and pepper. Mix in lime juice mixture. Serve cold.
Meal Options:
This recipe tastes great with a large Mixed Greens Herb Salad topped with Balsamic Vinaigrette and chicken sausage.
My kids like to eat this for lunch the next day by scooping up the salad onto rice crackers.
