Almost Keto Chocolate

This is a high fat, very low carb dessert for those chocolate lovers who are challenged with giving it up :-)

3/4 cup coconut oil
3/4 cup non-alkalized cocoa powder
1 small spoon honey
3/4-1 cup unsweetened shredded coconut
3-4 drops of stevia to taste

Melt the first 3 ingredients over moderately low heat, then add the coconut and stir. Add the stevia one drop at a time tasting as you add it until you get to the right sweetness. Mix well.

Spray a silicone soft bendable baking pan with coconut oil. Pour the cocoa mixture into the silicone pan and freeze. In about 10 minutes or when it is solid you can break it apart and store in a baggy in the freezer.
