2021 A New Beginning
So here we go, blog 1, 2021. Hoping I can provide tidbit and insight for you through 2021.
I know this blog has been rather sad with entries. Maybe even non-existent. Finding balance between working, researching, raising kids, taking care of dogs in a normal time in life seems to leave little time to write to you. Then add a pandemic, which created a constant state of change with even less available time and mental space. Now we are in 2021, and it feels like a new beginning. It's time to create some balance and look at what is really important.
One of those important "things" is how we take care of ourselves. If we don't do that, and we lose our health, and then not much else matters. Its hard to work, take care of your kids, have purpose or just enjoy life if you are stuck on a couch staring at that "brain drain" box we call a TV, too tired or unmotivated to do anything.
This past year has been quite draining and I have found myself having some of those feelings...and I don't like them. So I am on a mission to change. Last January I decided I was going to start working on one item in my bucket list, to learn Spanish. I have been working on that every day now for 410 days...pretty proud of my stick-to-itness. Now it is the beginning of a new year and I have a new mission, to create better habits, to find space to cook again and to create a routine that allows exercise routinely back into my life.
My hope is to bring you along.
I bought a cookbook awhile back called "The Paleo Kitchen" by Juli Bauer & George Bryant. This morning I made some lovely blueberry pancakes and coconut butter from her book. Juli also has a free website with recipes idea that I thought was a wonderful place to look for meal ideas and I thought I would share it with you, Paleomg.com
Back to my pancakes from this morning. I made them with 1/2 coconut flour and 1/2 tapioca flour and they were light and fluffy. The challenge with tapioca flour is many people with an overgrowth of bacteria or fungus in their small or large intestine don't do well with tapioca. If you have bloating, gas, heartburn, GERD, diarrhea, constipation or fatigue 30-90 minutes after eating, you may feel better using a recipe that is pure coconut flour instead of a heavier starch mixture like Tapioca. When you cook with coconut flour you use very little flour and more eggs so the carbohydrate load per pancake is significantly reduced. This makes it easier to digest and it provides less food for the bacteria or yeast to consume and grow off of. Coconut flour pancakes.
